4890 should work fine on P5B. About your CPU question, here's your answer. Just choose motherboard -> Socket775 -> P5B and you should see all supported CPU's.
Saitek X-52 Pro. I've been thinking about buying joystick too, since my friends are trying to get me into Flight Simulator and this is the one I'm most tempted to buy.

I'm maxing this game 1920x1200@+55FPS.
What are your system specs? I'm running medium textures, highest render quality, all sliders maxed, 1920x1200, specs in signature. I tried getting the textures to high but I don't have enough VRAM, I have about a gig with my two cards, but in order to get it to a playable level I have to drop the draw distance significantly.
You don't have 1GB of graphics ram. You only have 512MB. Both cards have to store the same data (IIRC AFR limitation).
