I've been playing since the first one on the NES, and XIII was the only main series Final Fantasy game (excluding XI) I never finished; it's just flat out balls, IMO. I believe making a fan favorite remake (which I presuppose would be VI or VII) would be good for the series; not just for fans, but possibly for the company as well. Perhaps tinkering with the unabashed successes of the past will open them up to what they should be integrating into the new games.
IMO, XI was the last *really good* FF. X wasn't bad, but that's when they started going down the road of world linearity; I thought X had a decent story, though. XII strayed from this a bit with a more open world, but it still lacked that epic feeling and story of the games before it; also, the battle system was like something out of an MMO. And then basically, XIII took everything I hated about X and XII and wrapped it in gorgeous graphics.
They need to do a complete 180.
Remake VI or VII, and see what you did RIGHT. Plus, it'll print money, which you probably need.

@RaIn285: Installing a large chunk of data to the HDD is going to be critical, I think - though the RAM bottleneck on both systems is really going to be a challenge; XBox 360 = 512 MB, PS 3 = 256 MB System / 256 MB Video.
San Andreas HD Edition will be cool and I'll more than likely be buying it, but next time they're going to have to branch out into something else; if the next GTA is Vice City HD or some other reboot it's going to start becoming slightly derivative.
@jwhdavison: As I said before, I'm very interested in PS Suite, but the game lineup is too paltry for me to buy into Xperia Play right now. I keep thinking it may turn out to be like SEGA's 32X and Saturn scenario; the Play is the less powerful, D.O.A. choice to the Vita. I'm due for a new contract this December; if they beef up the selection this holiday season and act like they're for real with PS Suite, I'll bite. Edit: Also, they need to make PS Suite phones able to d/l PSOne Classic and Mini games for play on them.
If Sony does the PlayStation Suite right, I'd consider going that route; I'd love to game on the go, but I don't want a dedicated device for it - and most casual games are worthless (IMO). I have zero interest in a miniaturized, high-end console experience in my pocket; ideally, I'd love something with more meat than casual (physical controls, etc.), but still tailored to portability (no physical media, etc.).
