I've got a PS3 aside from my gaming rig. I don't know if I'll get a 360, it's gonna come out with something that the PS3 doesn't have or that the PC doesn't have.

I can run it either on a VERY low resolution on medium settings or a bit higher res on low settings. Either way it looks like crap and isn't really playable....tho I did finish the demo twice anyway, not a bad game, just not worth upgrading.
Your graphics card can run the game on all medium settings at a nice resolution. It's your CPU that is holding you back, Crysis completely destroys single core cpus.A64 3000+

1280x1024 res no AA 15-30 FPS depending on areas, all high with physics and sound quality at very high
I get very low FPS on the snow part and so i turn all settings down to medium/low to get a good framerate.

The game runs rather smoothly on low. I haven't really toyed with the settings too much to see how I high I can go at a reasonable framerate.

1440x900 with everythin set to High, no AA, no AF, I get 30fps
1280x720 with everything set at Very High with no AA or AF gets me the same results
Specs- E6600 Core 2 Duo at 2.4ghz, 2gb RAM, 8800GTX at 768mb. I'm yet to overclock the machine so I'll give it a shot some time soon.
I had no problems running it on high at 1680x1050.

I can run it on all medium settings but I want a really smooth gameplay so I turn some settings to low.

You should be able to run it on those specs, unless that 7600GT is a Go version. So long as it's not, your specs are better than mine.
I just bumped up my textures, physics, and a few other settings to medium and it's still quite playable (though some slowdowns during explosions).
Finally, my laptop is keeping me from owning a 360 and it's not uber at all.
