Had to ditch FF a few weeks ago because the entire program kept freezing while it loaded the contents of a page. Couldn't even scroll through other tabs. Was hoping 5 would resolve this issue, but no dice.

Have you tried Pale Moon yet? I might have to snag that when I get home.
I've been using firefox 5, but then I noticed that it doesn't play video's well. I tried google chrome and it works way better. Maybe it's just my computer?

That is because Mozilla has chosen to take a Google approach to version numbering for browsers, meaning far more frequent updates with less significant changes. The UI won't be reinvented every time. Look at Chrome, for instance. It has barely changed since its release.
