Edit: Vagrant Story, Legend of Dragoon, Breath of Fire 3 & 4 were some favorites I don't think have been mentioned yet.
Final Fantasy VIII - Get it. It's probably my least favorite of the numbered PS1 Final Fantasy games, but still quite worth the experience.
Final Fantasy Tactics: In my opinion, skip it. I didn't care much for it, but I know lots of people will say you should play it, so it's pretty much up to you.
Final Fantasy Origins/Chronicles/Anthology: If you've not experienced any of the old NES/SNES Final Fantasy games (or Chrono Trigger), these versions are okay to get the experience. On the other hand, Chronicles was pretty crippled, but still, if you've never experienced Final Fantasy IV and Chrono Trigger, it's worth it for the experience.
Legend of the Dragoon: It's underrated. I really love this game. It's one of my favorite PS1 RPGs, actually.
Parasite Eve: This game is a fun game, but it's a bit different from other Squaresoft/Square Enix games. Definitely an interesting game, and definitely worth a playthrough.
Brave Fencer Musashi: This is a kind of attempted Zelda killer. It's not a bad game, but it's not necessarily Squaresoft/Square Enix's best game. I got my copy for like $10, so it wasn't a bad buy for me. If I had to pay much more for it, though, I wouldn't have got it.

Xenogears: This is an amazing RPG. One of the best RPG experiences on the PS1. You won't find it cheap, I can almost assure you (mine was $50 used a couple months ago), but if you find it at almost any price (you should be able to find one sub-$70 if you look around), buy it immediately. You definitely won't regret it.
I've still missed a lot of good PS1 RPGs. There's tons of them I need to pick up yet, but since I've not played them yet, I won't give you any sort of speculative opinion about them.
Most of the games I'm about to list can be hard to get and pricy ... and some of them are just plain weird or forgotten
Alundra - An action\RPG Zelda like that is pretty good
Grandia - The once exclusive title for the Saturn now to PS & it was good
Legend of Mana - Action\RPG with weird twist ... it's ok but not great either
Threads of Fate - Action\RPG only played the demo when it came out and it was decent
Azure Dreams - Never played it but heard some good review ... old
Jade Cocoon - I guess it could be compared to Pokemon ... but more mature in a way
Kartia - Tactic\RPG pretty cool by atlus
Koudelka - Some what a prequel to the Shadow Hearts trilogy. Really, really bad combat but awesome characters dialogue & cut scenes.
Arc the Lad Collection - Rare & expensive ... I just gor mine three days ago weeeeeeeee! And it looks pretty cool
Shadow Madness - Never played this one ... the only thing I can say is: It had the same graphic as FF7 but came 2 years later
Guardian's Crusade - Little RPG ... nothing fancy here
Rhapsody - ... Musical\RPG if that could be the description ... not for everyone I guess well if you like songs like in Walt Disney movie, that shouldn't bother you.
Thousand Arms - Weird little RPG with some sim dating in it
Xenogears/Chrono Cross - the best
Final Fantasy VIII
Vagrant Story
Grandia
Suikoden 1-2
Koudelka - just because to connect to Shadow Hearts
also if you like strategy RPGs, get Final Fantasy Tactics and Front Mission 3. Front Mission 3 is very nice but its about mechas, so if you dislike them dont get it.
