Your PS3 comes with a controller, use of any third-party intercooler voids your warentee. The 360 has problems where intercooler makes the system heat up more. (Don't take your chances) If you're getting a 40gig, you'll be happy to know the Cell has been reduced (From 90nm to 65nm), instead of 200watts it uses 130 watts.
For accessories, if you like to use the web a lot or chat online. Buy the 'thumb keyboard', it attaches on top of the controller. If you would like a headset, I believe any blue-tooth 1.2+ will do. They should sell madkatz 2.0 for $50's there. The PS3 controller comes with your PS3 BTW and is just fine & very durable. If your tv supports DVI HD you'll get the 5 prong cord because it can be 25-30 $'s. Much less then an hdmi & has the same effects (I believe).
You could plausibly pick up a webcam which is $40's called the Playstation Eye. (Not EyeToy, make sure you know this.) If you attempt to use a headset for ps2 games, know that only usb headsets will work. Blue-tooth headsets are only compatible with PS3 games (on the PS3 respectively).

This setup lets you use 4 usb' slots, 3 of the extra accessories & 1 for your controller. The thumb pad has to be plugged in and requires 2x AAA batteries. The cam is usb, the headset wireless.
