working in a computer repair shop, I've been lucky enough to experience exactly how many PSU's go bad...
when you bump the limit of your PSU's wattage your running a few risks, blown caps on the mobo are very common (and make your computer unusable), if its been running for a while the PSU can burn out (literally: we've had PC's that produce a burning smell when turned on, over time extremely high usage can deteriorate the PSU lowering its wattage...basically if you can think of anything that might go wrong with your hardware, the PSU can cause (its connected to everything after all). It also causes crashes and overheating.

Bottom line is, considering that power supplies are relatively cheap and extremely easy to switch out (so long as you get the right one for your case) I say don't even think about bumping your limit, give your PC some room to breathe on power!

Anytime I'm talking about graphics for the PC, I find it is very important to break things down by genre first:

Adventure/RPG - Oblivion

FPS - F.E.A.R.

RTS - Company of Heroes (especially because of the physics) OR Supreme Commander (different graphical styles)

TBS (turn based Strat) - Medieval 2/Civ 4

Simulators (city) - Ceaser IV

 those'd be my votes.
