Resident Evil 1. Remade with the new RE gameplay minus the "lots of ammo around" thing.
That remake would not be an improvement over the Gamecube Version, that game still looks fantastic today. That would be a complete butchering of the original and remade masterpiece.

You guys must be young, so many requests for the more modern titles. My list is, Deja Vu, Rescue the embassy mission and Another World.....prefer a reboot to these done using modern gameplay techniques rather than a remake.
- One of the games FF1-6. Because 2D is crap.
- Unreal Tournament (1) - Because I want to see a revival in the community.
- Tibia - Because everyone who have played Tibia dreams of a 3D version of this game.
I think FF7 needs a remake, and we finally have capable enough machine to make a true open world cyber punk FF7 setting.

Prime really doesn't need a remake yet, it's aged pretty well.
MDK - they did it for the sequel, why not the original?

I wouldn't go for any remakes at this time, but I would love a bunch of new IPs. Remakes usually go sour for me...usually. There were a couple of highlights.

I miss Rescue the Embassy Mission. Very fun game.

Why not Banjo Kazooie, the one that doesn't consist entirely of backtracking and tedious busy work.

Perfect Cherry Blossom (Could do with local and online co-op, hi-res textures, normal mapped backgrounds, arranged soundtrack, and an artist that isn't ZUN)
Warhammer 40K: Chaos Gate (Come on, GW. Give the 40K license to Firaxis)
Tales of Phantasia (Yeah, this game's been remade over and over again, though a lot could be done with a 2D linear motion battle system IMHO)
SSB64 and Melee ported to Wii U, with HD graphics and online support on the level of SSB4. No other changes.
The three I would pick (and reasoning)
1 ) System Shock 2, This game is still very much playable on the PC, but an updated version or even a remake of it, would go a long way. See SS2 WOULD be playable on console, and a modern PC version of it, or indeed a remake would make my year.
2 ) The Guardian Legend. would have to reworked from the ground up, to Work with modern audiences, but man that game was good. Abeit slightly hard.
3 ) Outlaws. Likely the best western game Ive ever playied, the story was fairly simple but incredibly well told, and the music, ooh man. Now if you had to make a remake, the story had to be the same, and you would have to use the same soundtrack, but ingame perhaps have more meat beside simply shooting. basicly being a case of recyceling the story and remake, and ultimately make a new kind of game around it, an fps/rpg hybrid might not be all that bad.
