That shot from The Order is strictly a color pass. Literally every single 3D asset, whether it's from a game or a movie, will look like that if you isolate only color (diffuse/albedo) information.
Any high end texturing job calls for cross polarized photography because the last thing you want is specular highlights and shadow information in your color map. If anything, that image shows a mastery of texture work on their part. Flat, uniform, evenly toned color maps is the ultimate goal and they nailed it.
I'm not saying The Order looks better by any means. I'm not arguing that they didn't go overboard with post-processing. All I'm saying is that the image you chose doesn't support the claim. If you were to isolate only the color info from Ryse, it would look the same.
When you strip away specular maps, normal/bump maps, AO and light sources, that's what you get.
