best game? none I love lots of games and consider them the best. Best for the genre? here:
FPS: Half-Life seroes
RTS: its between Age of Empires series and Command and Conquer
RPG: Between Fallout series and KOTOR series
I cant just pick *one*..thats just crazy.So i say Planescape Torment or Deus Ex...and maybe VTMB...and half life series.
It's a tie between Half-Life & Half-Life 2. Simply the greatest, most spectacular two games I've ever played. Valve is made of a bunch of utterly brilliant game designers.
"Your minions are fleeing the battle" :P I was playing this in the library and my headphones came out :o very embarrassing at the time but obviously hilarious in retrospect.If i had to pick just one, the original Dungeon Keeper.

FPS : Bioshock or Call of Duty 4
RTS : World in Conflict
RPG : WitcherEnhanced Edition
MMORPG : Guild Wars and Lineage II
I'm going to break mine answer down by genre.
FPS: Unreal Tournament - There is no over use of exploding barrels or hallways full of boxes, no contrived and lame story, no save point system. Its just good old fashioned kill everything that moves deathmatches. You can get your FPS fix in 10 to 20 minutes. If you want something a little more involved the game offers several other gameplay types.
Strategy: Civilization - This is one of those must have games for the PC. Its varied enough that you can play at the same settings every time and have a different experience every time.
RPG: Ultima VII: The Black Gate - The Ultima series is a genre defining RPG. Those who have played can easily spot elements from and the influence of the Ultima series in current RPGs. Ultima VII was the pinnacle of the series.
Adventure: Indiana Jones and the Fate of Atlantis - First, its Indy. Second, its the only adventure game I've ever seen or heard of that has three paths through the core of the game.
