When you come up against the warden in BG2 in the planar prison and he says something like, "Are you incredibly brave or very, very stupid?" And your player character can reply, "Bravery, stupidity... Whatever gets the job done."
When you are about to complete a contract for the Dark Brotherhood in Oblivion speaking to the victim, "The Night Mother calls you."
It's also pretty funny when Khalid (in BG) gets too injured and starts to flee from a fight screaming , "Discretion is the better part of valor!"
in NWN2 after you rescue the kids from Highcliff that have been trapped by wolves outside the ruins the party starts discussing how good a father you'd make and Elanee says something like, "Do you plan to ever settle down and have kids?" And you reply, "Is that an offer?"
Before the major battle in the crypts of Athkatla in BG2, when you meet up with all the allies you've gathered, Drizzt says something to the effect of, "I've sparred with the demons of the nine-hells... I shall not break a sweat here today." (worded better, of course, but it's been quite a while.)
"Have any of you guys seen a pink axe around here?" "RED axe! My axe is RED!" (wish I remember the rest of this humorous exchange from Drizzt's party in BG2)
Anything Viconia says is also usually pretty great.
edit: Also, the conversation between you and that matron in Ust Natha in the Underdark (BG2) where you have to pretend to be a eunuch to avoid bedding her so you don't upset your girl is great!
