From Software. Though, they're a bit more known now then they used to be thanks to the Dark/Demon's Souls series. But before that, they didn't have a really big following. But I've always loved the King's Field games and the Armored Core games.
Piranha Bytes - For the Gothic series. Always overshadowed by Bethesda even though i much prefer PB's approach to RPG's.
Blue Byte - They've got stuck in a rut trying to reinvent Settlers over and over, but they did get it right a couple of times in #2 and #2 10th Anniversary.
Microids - Very good at making atmospheric Pointie Clickies such as Syberia and Dracula.

and although they didn't "develop" maybe as much as they "translated" and "ported", I really miss WORKING DESIGNS.
Chunsoft (notable games 999 and zero escape) - sadly now the studio is closed.
Cing (notable games hotel dusk) - also sadly defunct
Shigesato Itoi (Notable games, mother series) - retired
Career Soft, maybe they have more popularity in japan but no one i talk to seems to know about them here. They are responsible for the langrisser(warsong) and growlanser series.
