Your trophies are held on a remote sony server against your PSN login. You can force a sync of this data from the XMB ->games->TROPHIES icon
Your save files etc. can be backed up to an eternal FAT32 formated device (drive memory stick) using the backup utility. This is good idea anyway as you don't want to loose data.
The Sony OS resides in Flash memory not on the drive and as soon as the PS3 detects the new drive it will prompt you to format it.
I upgraded to a 320gb drive bout a year about.. Its very cost effective although its worth getting a decent set of micro screwdrivers as the caddy screws can be tight.

Although some save data is copy protected, I think most EA games are.
I'm one of those that type something how I would say it but I use "could have", in fact when I was at school many moons ago my English teacher cracked me around the back of the head for writing "could of" so thats probably why I don't use it now. In general most computer speak annoys me such as rofl,pmsl and so on.
