Just about every puro wrestler, with several generic wrestlers based on actual wrestlers. Good luck finding a definative roster anywhere on the net. GameFAQs may have something if you look.
I never had a problem with any of those things in FFIX, but you know, that was only my experience.
I think the hardest game I've played, ever, was Soul Calibur III. It seemed that no matter how good I became, the AI overwhelmed me with some cheap move. It angered me to no end.
