How did they accomplish this feat? My burgers at home turn to all kinds of oddly shapes. Even the perfectly round beef patties you buy at the store turn to different shapes when I cook them. Mcdonalds also has the perfect thickness for the patties too.

There factory produced to be perfectly round (or square or whatever) then frozen and packed tightly in boxes. We once bought in the Burger King patties for my work and they stayed perfectly round throughout cooking.

Point is- machines made them perfect.

Exactly, hamburger presses can make hundreds of burgers an hour and can be any shape that a customer wants. I used a squarish hamburger press when I worked at Busch Gardens in VA many years ago. You work in a refrigerator full of hamburger meat that comes in big boxes.

1. Hamburger patty pressing/shaping device

2. They steam-cook their meat, they don't grill it.. I suspect the "shape changing" that occurs when you cook yours is because of dehydration, which would not happen with steam.

Because the normal patties are 10:1, meaning it takes 10 of those to equal one pound... the 4:1 (quarter pounder) and angus (3:1) are much bigger and fuller.

McDonalds patties start out frozen solid like a rock. When I used to work at McDonalds, while we were closing, we played frisbee with them. Of course, when someone missed, we got to see the meat missile shatter into a hundred pieces when it hit the wall.

For one, when they cook their burgers, they cook from the top and bottom, hence why it only takes about 2 minutes to cook your burger. They are mega thin, which in turn, helps keep it's shape. They aren't putting ingredients in that most do to make burgers, which is why it stays together so well.

It's called factory made patties, produced from waste meats like cow snouts and other stuff that is just as gross, but edible, that has been turned into a paste and pressed into cookie cutters and flash frozen, then grilled in specially made grills that ensure the roundness of the 'meat' Enjoy your fast food.

Are you using a proper binding agent in the hamburger? When beef, especially fatty ground beef cooks, it releases fat, which causes the meat to shrink. So, even if you shape the patties round, they will deform when being grilled/fried. Try using bread crumbs, a couple eggs and flattening the patties more if shape is that important.

They breed spherical cows, just ready for slicing to streamline the process of patty production. I've heard these days they even breed cows with a seasame bun on top and a slice of processed cheese on their back.

You know, I really like McDonalds. It kept me going through my poor college years, and while I believe Checkers to be the greatest fast food establishment of all time, it hurts to see things I love being so hated.

But yeah TC, I have no idea.
