The cucumber is a fruit. Anyway, spinach will always be my favorite vegetable. I especially love it in Indian/Pakistani dishes.

I can go with spinach or carrots.

If the way the vegetable is prepared isn't an issue? Sun dried tomatoes. I've got a major weakness for sun dried tomatoes.

Clearly the potato is the most versatile, but I love using peas as an ingredient for various dishes, but what can I say potatoes are bomb.
