The front bumper view for rally/track racing. Everything feels more instant and "in the moment" when the camera is pretty much on the road itself. I use the far out view for when I'm on a drifting race though.
Depends on what game it is and how serious that race is. If they have decorated the behind steeringwheel view like they have in the Colin McRae series I usually go with that because it feels more realistic, it's just like you are driving the car yourself. Of course it much more difficult this way and you miss all the details in the surroundings.
In the car or with a bumper view. The "flying behind your car" view doesn't make any logical sense. Is Lakitu back there?

Yeah, because hanging on the bumper roadkill-styIe makes just so much more sense.
"Look at me, I'm driving!"
:P
Nothing but the behind the car view in games like Need for Speed and Midnight Club. I'm warming up to the cockpit view in Forza 3 and Dirt 2.
Behind the car is easiest, but I like cockpit view because it's the most realistic and immersive. And really, once you get used to it, it's not that hard anymore (except with some the very low-to-the-ground race cars).
