Cthulhu was described as a monster with a squid-like head, and Davy Jones has the exact same thing. I'm no sailor and I haven't heard about the descriptions in the old tales (Davy Jones is older that PotC, isn't it?). Why did the film makers did a similar head for Davy Jones?
