If we go by your definition of atheism, it would include babies, agnostics, and people who have not come to a conclusion about the existence of gods (apatheist).
The problem with the included "lack of belief" definition is that it is too ambiguous and vague. If someone told you they were an atheist using the "lack of belief" definition, you would still not know if they were agnostic, atheist, or apatheist. This makes the word useless.
In addition, the "lack of belief" definition is that it is not accepted by the majority of people. I don't know anyone who considers babies, atheists because they "lack belief in gods or the supernatural." I don't know anyone who is considered an agnostic or undecided about the existence of God who call themselves atheists either.
