Well the idea that you can lose or damage a single disk and the entire game becomes unplayable isn't fun. I lost the first disk of Metal Gear Solid so I can't play it. I don't want to buy it again because I had an original MGS and I don't want some greatest hits one. Also, what do I do with the second disk? Sell it on ebay with the case? Having one disk just make it easier. Especially with games that have 3 or 4 disks like Final Fantasy 7 and 8(games I own).
Also I think the idea of multi-disks games are kinda of thought of as in the past. I can't recall either the PS2 or Xbox having multi-disks games, don't know about gamecube. This is just me trying to remember off the top of my head. But going back to something that happened 2 generations ago seems like a a step backwards. Not hating on the topic, just saying that's how some people may feel.
If multi-disk games are a problem, and mandatory installs are a problem, I have a idea! Use cartridges! They load faster then disks, and the way storage is going, you could probably fit a lot on cartridges. My little usb stick can hold 8 gigs and it's as big as my thumb! Imagine what a cartridge the size of dvd could hold! That's a lot of gigs! Plus they're harder to break! Ok I'm done.
