FFI through FFV shouldn't be touched unless they're just the GBA remakes and stuff. The storylines are just too simple to merit a fully 3D makeover. However, FFVI and VII are good candidates.
Jeez, there are so many good ones. I liked Tifa and Loz in the church, and, of course, Cloud vs. Sephiroth. I just thought the Cloud and Sephiroth battle was a little short and less than epic, if you take my meaning. In other words, 9/10. :P
