I'm gonna have to go with the ORIGINAL Ganon in the ORIGINAL LoZ. It wasn't as epic or as graphically impressive as the other Zelda games, but the sense of accomplishment I got from it was unparalleled by any other. Granted, I was 7 years old, but man, it was good. Best non-Ganon fight? Defeating the Water Temple in OoT.
The most badass of Zelda bosses is Ganondorf's final form in OOT, but the most satisfying victory is in defeating Ganon on Death Mountain in the original 8-bit game. Dodongo was always fun, too.
Of course, if any enemy is allowed, not just bosses, I'm gonna have to go with Like-like.
