Any future Wither games won't take a hit because of piracy. You can't even say the Witcher will be "consolized" (I don't think that's the right word to use) seeing how CDP has looked into console development in the past. The Witcher 1 was supposed to be released for 360 as well, but there were some legal issues that prevented that. I think it was because of legal issues at least.
The other reason for their future games not seeing a decrease in quality would be CDP's mature reaction to it. They know piracy is terrible, but they didn't flip a table at their consumers.
They know there is essentially nothing they can do about it, so for whatever reason its nice that they dont ruin the experience for the paying customer. Businessmen don't go around hurling insults at their own customer base, unless they are terrible at their job. If I were you I would get a PC and console, I am sure your girlfriend will play occasionally if you cater to her tastes(Dance Central, Kinect Sports etc.) An Xbox is dirt cheap anywhere from 200-400$, and you can(and should) build a PC, and use it as a hub for everything. You will have the best of both worlds, you will be able to share with your lady, and you will have every potential with the combinantion. Streaming Movies from the internet is great, I havent had cable for over 6 years for that reason alone.
