To set up suspense and mislead us, thus making the anecdote more entertaining.

See, when the reader reads "this Asian guy pulled out"..., you expect the next words to be "a calculator" or "chopsticks".
However, when the reader stumbles onto the next word, he is surprised by the word "knife", thus adding shock value to the story.
