I've been thinking about buying one but what are the major differences between the $200, $300, and Elite X360s? Is it even worth considering the $200 X360?

Agreed. 60gb is plenty unless you're downloading a ton of movies or games. I've had the old 20 gb drive for a while now and I still have enough room.If you're even considering getting xbox live gold, get the pro or elite. You need the hard drive to download demos and videos, as well as download content such as map packs. The 60 gb pro offers plenty of space.

what's better than asking people who actually have one?
the main appeal to the elite is the black colouring and that it has a 120gig hdd which was a lot better when it first came out since the launch pro only came with a 20gig hdd but since they have now upgraded the pros hdd size to 60gig its not that big a deal anymore. as far as im concerned the pro is enough but the elite looks cooler and has a bit more convenience with the bigger hdd
