Nothing's wrong with your controller - it's your car setup that's wrong.
Drag would be stupidly easy if all you had to do was shift gears, so they added torque steering. If you stick a 1000bhp engine into a car that wasn't designed for it, the wheels will spin madly, try to lift the front end up, and likely swerve all over the road. This is what is happening to your car - as you go down the strip your car drifts/swerves to one side and will hit the side walls or crash barriers totalling your car.
It's been a while since I've tuned my cars in Prostreet (got them setup nicely last year and just left them), but try fine tuning your suspension and wheel pressures. You'll still want to keep your thumb ready to correct your course, but once setup right you shouldn't need to steer at all

I really hated NFS PS. I actually traded PS in for Carbon, and I'm happy with the choice. Even though it's older Carbon just plays better to me. (It is frustrating as hell sometimes though, good luck taking down the Lambo in the canyon duel.)
