Hmm, environments would have to be: - Assassins Creed - GTA: IV - Fallout 3 - Dead Space - Battlefield 2: Modern Combat (I know alot of you didn't expect that but i remember playing it and thinking "holy poopoo this is like a warzone")
There are so many amazing environments in games but standout recently was mirrors edge. Really impressive shading and style, it made you feel like you were in a futuristic city. Short and sweet game. Oh yeah , bioshock - one of the best games i have ever experienced.
the best dead space looking out the windows and being in zero g were beautiful and walking on the flesh covered floors loved the way your boots squelched on it.
also good:farcry 2, assasins creed, battlefield bad company, prince of persia and viva pinata 'its party time'
