I think whether you'll enjoy it really depends on what you are looking to get out of it.
if you want an exciting action game with tight controls and quick pacing, this is definitely not for you.
if you like the idea of living in the boots of a cowboy for a while and role-playing as one, spending time slowly exploring a gorgeous world and getting to know some colourful characters, then you might think its one of the best games ever. I think you need to be fully on board with the setting/time period and be able to appreciate much slower paced gameplay and story progression than you typically find in AAA games.
For myself, I consider immersion and atmosphere to be the most important factor in enjoying singleplayer games, and RDR2 NAILS the immersion. it also helps that I love the setting and time period.
so even though the controls feel pretty bad until you get used to them and the shootouts are pretty mediocre from a mechanical perspective, its a game I have enjoyed immensely (I'm not finished but i'm done the 'main' part of the story, currently going through the epilogue). the story is definitely longer than it needs to be but I loved it overall.
