Trails in the Sky First and Second Chapter is the closest thing you can get to the quintessential JRPG. It has pretty much all the tropes one can expect a JRPG, and it pulls them off fantastically. The real selling point is everyone in this game has a story. There is no nameless NPC in the whole game world. The most unimportant NPC in town will have something valuable to say, often part of a side story that evolves as you clear plot points. Just understand that the game is not something you will beat quickly. You are looking at 100 hours of a slow burn where writing is king.
Chrono Trigger would be another great entry point. The game shows its age in some aspects, but in so many others it was very forward thinking. My favorite parts of it are the combat system being a seamless transition and that god tier soundtrack. Just a warning, go in expecting a good, maybe great game. Its VASTLY overhyped, and that kind of ruined my enjoyment when I finally got around to it a couple of years ago.
I would avoid the Persona games as a first foray into JRPGs. My own personal dislike of them aside, it is a game that really benefits from being metagamed. It is much harder to just sit down and enjoy it if you care about seeing most of what the game has to offer because time is a real resource. If that isn't an issue, then by all means dive in.
Avoid Kingdom Hearts. The combat is awful, and the story, and by extension lore, is bad to put it nicely. If you want this type of game then grab a Tales title. Most of those have bad stories too, but some of them like Tales of Graces F have an amazing combat system to make up for it. Tales of the Abyss has the best story, which isn't saying much, of the few I've played if that is what you are looking for.
Final Fantasy mainline as a series is hit or miss. The first three aren't worth playing as someone new. 4 could be worth looking into if you can track down the PSP version. Skip 5 and just pick up Bravely Default if you want to play around with the job system. 6 is overrated, but worth playing the GBA or SNES version.
7 lost a lot of its luster because of how awful it looks. I only bring this up because many people bought it because this was Crysis in 1997. It is still worth playing because of its influence on the medium. Didn't overly like 8, it has a prevalent romance theme so it maybe worht looking into if you enjoy that. 9 was an attempt to bring the series back to its roots, this is my favorite one and where I would recommend jumping in at.
Final Fantasy X was OK, the combat system was great, the story not so much. Final Fantasy XIII and its other titles I haven't played.
