I don't think you can turn it off in Franchise mode. But what you can do is set the play clock to start at something longer than 10 seconds so after you pick a play quickly it won't run off as much time. Set it for like 15 or 20 seconds and you should have plenty of time to audible if you want. You could also set the Quarter length longer if you feel the accelerated clock is shortening your games. Set if for 10 minutes quarters.
