Always a tough question since I can easily replace any of them with a number of others depending on mood but the ones I could probably watch again and again:
Cowboy Bebop
Black Lagoon
Stein's; Gate
Ghost in the Shell Stand Alone Complex
Armitage III (The originals, not the polymatrix edit)
I have more than 5 but just listed the ones that had the most impact on me early on. Series only in no particular order:
Rozen Maiden (This series was an impulse purchase that I bought on DVD. Knew nothing about it and ended up loving it. It's probably not for everyone though.)
Clannad/Clannad Afterstory (Clannad, Kanon & Air are pretty much the best example of great Anime adaptations. They really capture the original Visual Novel's charm and stay true to the overall feel. From the ones I've played at least.
Kanon 2006 (I'd recommend watching the 2006 adaptation over 2002. Both series are good in their own way but 2006 really embodies the Visual Novel. Maybe in a way I'd say it even does it better.
Air (TV) (Was actually the first Anime DVD I purchased at my first and last local convention back in 2011 I believe it was.)
One Piece (I'd tell you to read the Manga. The Anime is fantastic but once you catch up it's just not the same. The filler is actually enjoyable too.)
@Ballroompirate: Good to see you're a Black Clover fan. The series gets more hate than praise unfortunately.
The only couple of problems I have with the series that come to mind is that the worldbuilding could have done better. It just doesn't feel as monumental compared to others. I also felt as if certain arcs were introduced far too early on. (Seabed Temple with Vetto for example.)
The chemistry between the Black Bulls is really fun though. Kind of sucks we have to wait until mid June I think it was for the latest episode to finally come out. I read the Manga also.

The Manga is a lot better but the Anime had a rough start cause of the studio that was doing the animation was doing it half assed, at least that's why people hated it while I still enjoyed it. The only thing I didn't like in the Anime so far is the Black Bulls hideout going Optimus Prime was cringy to watch compared to the manga version.
Also I can't wait for the Heart Kingdom/Clover Kingdom vs Spade Kingdom and Dante to be in the anime
