That was the problem I had with turkey. I love drumsticks but they're always so tough the next day.

Typically that means texture. Hard to chew.

That's correct. It's a textural thing.
dark meat is honestly the only part of the bird I like.
Until I learned how to brine. Then the white meat actually stays moist.
Brining and spatchcocking. Learn it, folks, it'll make you a chicken/turkey god.
I sometimes will use left over meat like OP mentioned in a fajita, casserole, or grilled sandwich. Good stuff.
