Mostly sunny side up, well-done with nothing but salt and pepper. I love using some sort of cured meat as the base for my eggs. I'd slice some salami, roasted beef or some sausages then I'd sear the sliced meat in light cooking oil. This releases the fat and the flavor of the meat and infuses the oil with it. Then I'd add my eggs and cook them well without bursting the yolks however. Had some for breakfast today and it was so good.

I should mention that I find scrambled eggs to be vile; dunno why its still eggs.

I don't have a preference I just rotate between a few different types so things don't get boring.

I like mine over easy.. If I can also get hashbrowns as well all the better. The egg yoke mixed with hashbrown is delicious.

Whenever I go to my local breakfast places, I tend to order one of:

- Poached eggs with bacon and hollandaise sauce on a brioche bun.

- Poached eggs with heirloom tomatoes, smoked tomato vinaigrette, prosciutto and avocado on rye bread.

- Poached eggs on sourdough with maple and coffee glazed bacon steak, avocado and goat's feta with a lemon tahini dressing.

Omelettes are good, and scrabled is fine...but seriously, poached eggs are the only way to do it.

I guess it helps that I live in a city famous for its cafes and very relaxed breakfast hours?

Tried it. But instead of cheese I used butter.... Turned out pretty well i say.

If given a choice, I'll probably choose scrambled eggs on toast most of the time.

Since I'm lazy though, I just do over easy at home and add some tomato sauce and pepper with that on the toast.
