You can do it with GHWT, but not with GH3, as far as I'm aware. It's why I chose WT. I haven't played with it yet, but I will soon. Have to teach myself how to use the slide bar properly first.
You can get customs for Gh3. You just have to hack your Wii. My friend has customs for his game because, well, he hacked it. But, I don't think Gamespot's rules allow us to discuss homebrew projects.
