I have beat it before and did the hunts and leveled my characters, but i want to play it again and just do the story will my characters be leveled enough to kill the bosses if i skip the hunts?

If levels are what you want, you can always do the Dustia leveling trick. From the very beginning of the game it can set you off and make you the strongest.

I knowa buddy of mine beat the game right out without doing any of the extras. He had very limited time but was itching to talk about the game with me after I beat it. When we did discuss it, he did go back and beat everything after hearing me tell him about everything, but he basically never veered off the storyline and beat it with pretty decent speed, never complained on the difficulty being too harsh

Should be. Worst come to worst you can just do some grinding on non-Mark enemies to bulk up.
