In the case of ME3, its not like people wanted the game changed... the game was awesome, most agree. Its just that people invested a huge amount of time and money on this franchise, and Bioware built up the hype and promised so many things, so fans will expect them. I dont care if they change the ending or not, but I understand why people feel this way. All they want is for Bioware to DELIVER WHAT THEY PROMISED

If only they did not promise something they cannot deliver ....

As a programmer and a gamer, I feel your pain game developer dudes.
