Another one that goes overlooked in the zelda universe is the Stone Tower Temple from Majora's mask. That was so crazy how the level flipped upside down half-way through it. You could even fall into the "sky" and die. That was so unique. Lol most of my fav levels are from zelda it seems.

What is your favorite or most memorable level from any video game? It could be based on a sense of atmosphere, wow factor or anything else you liked about it.
Mine is the forest temple from Ocarina of Time. A moody dark temple in the middle of the forest. And the music was amazingly creepy.
