I feel really dumb asking these questions after completing more than half of the game already:
1. How/where do I switch from Auto to Manual battle mode, so Zael doesn't attack automatically?
2. Where/how do I change the AI settings for each character or make them cast certain spells during a battle?

You go to options, go to option 2 or 3 not sure which one, and select "Manual" instead of "Auto", beware that your attacks will give less damage than in "Auto" mode, but you can attack repeatedly. :)
