When i was playing the ncaa 09 demo, i just called in a blitz, told me linemen and line backers to crash in. But they still didn't sack the guy in time. Suddenly he thew it and the reciever got a touchdown...There was way more linemine and line backers than those blocker guys.
I was also controlling a free safety to help with the charge...
If you blitz a lot of defenders there might not be enough left to cover the recievers so some offensive players might be wide open. This lets the quarterback dump the ball off quickly and avoid the sack.
