Let's see...
RE1 - Pretty good rip-off of Alone in the Dark. Hilariously cheesey tone and awful dialogue, which was fixed in REmake.
RE2 - Never played it. It never gets re-released on things!
RE3 - Meh. Too much of an acton focus, bad QTEs, etc.
RE4 - Generally excellent, although it's a really very silly game. Any slight amounts of horror were shattered by...you know, outrunning a giant mechanical statue of a kid in a Napoleon costume.
RE5 - Total blast from start to finish. Probably my favourite co-op shooter ever, and certainly my most played RE game. It does everything RE4 does but better, and Wesker is such a wonderful villain compared to...Saddler? Salazar? Those guys.
RE6 - Just as good as the previous two games. The gameplay and boss fights are the best in the series, and the game has a ton of content. The scope brings it down a notch though - some segments could have been trimmed or polished more.
Anyway, I guess my vote goes to RE5. It's certainly the most entertaining RE game - although admittedly a lot of that is characterised by great co-op experiences.
