I think graphics are going to crysis automatically. Of course we haven't seen any finished graphics of halo 3 at all, and noting from the weekly updates the work in progress stuff doesn't nearly represent the final product, but beating crysis?
Halo's strong point has always been the gameplay. It's very smooth, and extremely easy to pick up. Also bungie is implementing a new feature which can improve the gameplay again. There's a probable 10 for halo 3 in gameplay (just like 1 and 2). I don't know much about crysis though.
Controls... well... depends on your preference? Halo 3's controls will be as good as shooter controls on consoles go, crysis will be as good as pc fps go. Not much to be said here.
I think crysis has most chance for FPS GOTY if only because of the possibilities. It's a new IP, so they don't have to stay to old styled gameplay or anything.
