Humanity merchant Dark Souls

Is the undead merchant in the sewers suppose to have a finite amount of humanity for sale? I haven't bought that many off her but its not an item for sale from her anymore.

huh i didn't know she only has one... ah well you can just farm humanity from rats in the depths

seriously considering this game.. is it really hard to the point of impossible like a friend of mine said???
