Why could Jesus not have grown his hair long? And how can they tell the pigment of his skin? Skin color can vary between members of the same race or ethnicity or whatever.The "long-haired hippie Jesus" look is pretty much a complete invention by European painters.

Not me. Jesus was a full blooded Jew. He was not African, Caucasian, Indian, nothing of the sort. He was a Jew. plain and simple. He came from the line of David, the tribe of Judah in the the occupied country of Israel.Is there anyone who pictures Jesus having Caucasian qualities?

Given that Jesus was a Jew living in the Middle East, and given that his parents were not recent immigrants, it is very unlikely Jesus had fair skin.
As for his hair, certainly he could have had long hair, but given the culture in which he lived, it's rather unlikely. Paul even wrote in his letter to the Corinthians that long hair on a man is a disgrace (1 Corinthians 11:14). The idea that he would say this of the man to whom he dedicated his life would be a bit odd, to say the least.

He might have had longish hair , but perhaps he kept his hair at a decent length. He definitely had a beard though.That picture is just scientists' best guess as to a typical man living in that general area. It's an approximation of an approximation, nothing more.F1_2004
That "guess", if you wish to call it that, is based on the structures of skulls found in that area from the time period in which Jesus lived, on what scientists know today about the distributions of skin colors in the world today, and on what is known about the customs of the culture in which Jesus was raised. At the very least, it's rather likely to be more accurate than the White Hippie Jesus he is typically depicted as today. There is no evidence, and therefore no reason to believe, that Jesus was significantly and fundamentally different in appearance than his contemporaries.
