I really like Uematsu's "Loss of Me" (FFIX); which was Beatrix' soundtrack.
In FFVIII, I like Balamb Garden, Galbadia Garden, and Boss fights soundtracks.

I also sat in front of my game and listened to the music of a Final Fantasy. I started FFX multiple times just to watch the Blitzball intro video... great stuff.
Music can be such a powerful thing in games, especially the Final Fantasy series. I particularly love the soundtrack from VI, especially the song that plays shortly after you're in the World of Ruin when Celes is on the island with Cid and she climbs to the top of the cliff... I think it's the same track that plays during the Opera scene (Aria di Mezzo Carattere) but I'm not sure. I also love Tera and Celes themes.
And who could forget Battle on the Big Bridge. The original is the best, but the version in XII is pretty good too.
The opening song in IX everyone is referring to is called "The Place I'll Return to Someday" and I've been known to let the opening play for a few times myself :)
But how can we forget that one song that simply screams Final Fantasy: The Prelude! I loved the fact that the first 9 games began with this beautiful song. The remix in X was a good change, but it was completely missing from X-2. I was very pleased to see it return in the opening of XII where it belongs: at the beginning of any Final Fantasy game.
I couldn't decide so I compiled a list of my favorite songs from each Final Fantasy game (that I've played that is).
FFI: Battle Theme; FFIII: Aria, The Maiden of Water, Legend of the Eternal Wind (Opening Theme), and The Final Battle; FFIV: Theme of Love and the Final Battle; FFV: Clash on the Big Bridge; FFVII: Cosmo Canyon, Tifa's Theme, and Let the Battles Begin!; FFVIII: Liberi Fatali and Waltz for the Moon; FFIX: Rose of May (Beatrix's Theme) and Melodies of Life; FFX: Path of Repentance (Piano theme from the Via Infenito), To Zanarkand (probably my favorite if I absolutely had to choose), and The Ending Theme; and I really liked Eternity (the opening theme) from FFX-2. And of course I have to include the Prelude and the Prologue (The songs from almost every FF title).
I really wish Nobuo Uematsu would have composed the soundtrack for FFXII, I can't even imagine how much better a game his compositions would have made it. Seriously, the main thing I look for in a Final Fantasy game is a good soundtrack, it makes it so much more of an enjoyable experience. Does anyone else agree?

Yup, when you face Gilgamesh. Battle on the big bridge is pretty cool.
others I like are:
One-Winged Angel
Dancing Mad
the music playing when facing braska's final Aeon in X
The music playing when fighting Hades in IX or doing that "hunting" competition in IX.
music when fighting espers in XII
Those are some that come to mind!
By far 'One Winged Angel' from FFVII, just such a classic, and great piece of music!

They're both pretty awesome, but I would have to with the original, it really sounds simply amazing
Personally I like the AC version better. 1. because the meaning of the lyrics are better and 2. Because of the awesome guitar, bass, and drums!:D
I love all of em' but my favorite pieces are Opening: Bombing Mission ff7, Fighting & Fanfare ff7, Red Xii's theme ff7, Holding My Thoughts In My Heart ff7, If You Open Your Heart... ff7, Don't Be Afraid ff8, The Man With The Machine Gun ff8, Balamb Garden ff8, and Your Not Alone! ff9, there are so many others but these are some I sing in my head the most heh.
