I believe that this video is intended to show off supers that do not necessarily involve flashy cinematic beat-downs, despite Zero and Ai-chan being featured heavily (again).
I am sure many of the other character combinations can come up with counters for Ai-chan's tricks - or anyone else's, for that matter. I am more anxious about any later updates to this game though, if Capcom is thinking of expansions - specifically expansions to the roster. I would not be surprised if Resident Evil characters end up in this game later. I would love to see Chris Redfield summoning that boulder for him to punch into the face of opponents.
I don't know, people tend to stick with characters who they can pull off easy combo's with. Zero looks like he isn't tough to use, but the fact that you cant really combo into his specials and most people would likely rely on basic combo's, I don't think it will be a big deal seeing him online.
