Yes, you can definitely play turn-by-turn online. If you buy a new copy of the game, they'll be a card included with an online pass code that you enter when you first load it up. This unlocks all the online. If you get a used copy, you'll need to buy that pass.
AC1 felt more like a tech demo if anything. One of the most repetitive games of all time to me. ACB brought in incredible platforming sequences and awesome side missions.
Set yourself up like you're doing a counter, only instead of countering hit the disarm button (it tells you what button to press in the top right corner of the screen -- depends on what platform you're using).
