Nintendo is doing it's own thing. It's not focusing on having the best/most realistic graphics but it does have it's own niche. So what if the graphics didn't improve that much since sunshine they fit what the game calls for and the games a lot of fun. Also, screen shots almost always look worse than actual game play.
