By far 'One Winged Angel' from FFVII, just such a classic, and great piece of music!
Also I love 'Via Purifico' from FFX, beautiful piano piece, and 'City of Ancients' from FFVII is pretty good as well.

Yeah, however, usually when I replay it, I can't bear myself to do the Final Battle, I end up doing everything that's bonus (beating all the weapons, getting the best weapons for my characters) just because I just don't want it to end!
