Though it seems like an inconvienence, you should be serving a customer that wants to purchase something and came between opening and closing time.

I went to some place with a few friends just at closing and we got a ton of free food since they were going to dump it anyway. It was good stuff, so I suggest being that dick that shows up around closing cuz you might get free food.
