The main problem with The Simpsons: Road Rage isn't that the graphics are ugly, but rather that The Simpsons license isn't integrated deeply enough into the game.
While it's better than the poor GameCube port of the original Crazy Taxi, ultimately, the only saving grace Road Rage has is that it's a Simpsons game.
While The Simpsons is often entertaining and enjoyable, The Simpsons Road Rage for the Xbox is not.
